If you are one of those people who eats with their eyes, this recipe is for you! I personally love eating food that is full of flavour, this includes anything spicy! These spicy stuffed spaghetti squash’s are delicious and packed full of nutrition.
What you will need:
1 small spaghetti squash
1 chicken breast
1/2 a tomato
1/2 a red pepper
1/4 cup of onion
olive oil
chilli powder
cayenne pepper
garlic salt
Step 1: Begin by cutting the spaghetti squash in half, cutting off the ends first will help make this an easier task. Add a tsp of oil to the inside of each half and spread it until the entire interior is coated. Place face down on a baking sheet and place in the oven for 45min at 350 degrees.
Step 2: Once the squash is cooked, take it out of the oven and use a fork to break up the inside. If you find this part difficult, the squash needs to be cooked longer.
Step 3: Cut the chicken breast up into small pieces and fry until cooked.
Step 4: When the chicken has finished cooking add a 1/4 cup of water to the skillet along with the seasonings of your choice. I added chilli powder, cayenne pepper and garlic salt. Let simmer until all the water is gone.
Step 5: Chop up the tomato, red pepper and onion into small pieces. Grate the cheese using a grater with smaller holes.
Step 6: Add a little bit of cheese, chicken and vegetable to each squash. Mix it in with the interior of the squash. I added a thick layer of everything on top as well. Place the squash back into the oven until all the cheese has melted.
Step 7: Enjoy the delicious nutrient dense dish you have just prepared!
