Spring is here! Sort of. Its that weird time of year where you aren’t sure if you should be eating hot soup or licking a cold ice-cream cone. Pasta dishes are a versatile way to keep your meals delicious and exciting. Today I am sharing a dish that takes less than 30min to prepare and has all the important nutrients you need in your meals. It’s also delicious!
Here is what you will need:
2 medium sized chicken breasts
1 package of pasta noodles of choice (I used rice)
1 orange pepper
1 cup of fresh spinach
1/4 cup of red onion
2 fresh cloves of garlic
1 tbsp of red pepper flakes
Olive oil
Step 1
Start by getting the chicken into the oven! I like to bake it at 350 degrees with a little bit of olive oil. Then slice up 1 orange pepper. I prefer to split it into quarters and then slice it thin. Dice the onions until they are your preferred size. Wash the spinach and dice if you prefer smaller pieces.
Step 2
Sautee the orange peppers in a tsp of olive oil for 3-5min or until soft.
Step 3
Once the pepper is soft add in the spinach and onions. I also added fresh garlic, you can use garlic powder if no fresh garlic is available. Sauté until the onions have caramelized and the spinach has wilted. Add a Tbsp of hot pepper flakes and any other spices you enjoy! I found that the fresh garlic added more than enough flavour.
Step 4
Set the sautéed veggies to the side. Bring a pot of water to a boil, add the rice pasta. Keep a close eye on the pasta. If left to long it will become very mushy and hard to serve. Adding a 1/2 tsp of salt to the pot will help prevent the pasta from sticking together. When the pasta is cooked give it a good rinse to remove excess starch and add the sautéed veggies.
Step 5
All thats left is the chicken! Once it is fully cooked slice it into thin pieces. Add it to your pasta and you are ready to serve. If the pasta seems dry you can add a dressing of your choice, a little extra olive oil goes a long way!
*optional: a little lemon juice brings a nice acidity to the dish
